Diploma in Entrepreneurship (Bakery & Café Operations)

Course Synopsis:

The Diploma in Entrepreneurship specializing in Bakery & Café Operations is designed for aspiring entrepreneurs with a mindset to become successful in pursuing their entrepreneurial dream and prepare them for a career in the food and beverage industry. Through a combination of theoretical and practical training in the kitchen.

The learners will acquire the knowledge, skills, and competencies to design and create an assortment of breads, cakes, pastries and specialty beverages. This programme is also designed to help equip learners with the skills to perform functions in business through digital marketing and technology.

Modules:

1. WSQ Food Safety Level 1

This course aims to equip food handlers with the knowledge and skills to follow food safety and hygiene procedures and policies, as well as maintain the cleanliness the food establishment premises. Food Safety Course Level 1 is a mandatory training program for all food and beverage staff working in SFA licensed food establishments and/or anyone interested to learn safe food preparation.

2. WSQ Maintain F&B Production Environment

This module will equip learners with the knowledge and skills to maintain food and beverage production environment. This module will provide learners with the importance of maintaining the kitchen environment to acceptable standard of cleanliness, including tools and equipment.

3. WSQ Make Tarts and Short-Crust Pastries

The aim of this module is to enable learners to design, prepare and produce a range of Tarts and Short-Crust Pastries. They will learn to evaluate and improve the quality of Tarts and Short-Crust Pastries.

4. WSQ Make Choux Pastries

The aim of this module is to enable learners to design, prepare and produce a range of Choux Pastries. They will also learn to evaluate and improve the quality of Choux Pastries.

5. WSQ Make Café Style Bread

The aim of this module is to enable learners to design, prepare and produce a range of Café Style Bread. They will learn to evaluate and improve the quality of Café Style Bread.

6. WSQ Make Basic Cake

The aim of this module is to enable learners to design, prepare and produce a range of basic cakes. They will learn to evaluate and improve the quality of the cakes.

7. WSQ Prepare Advanced Cakes

The aim of this module is to enable learners to design, prepare and produce a range of advanced cakes. They will learn to evaluate and improve the quality of the cakes.

8. Café Style Specialty Beverage

The aim of this module is to enable learners to design, prepare and produce a range of specialty beverage and coffee. They will learn the methods of production, base ingredients, characteristics, quality and the deliverance of service It includes the practical preparation of specialty beverages.

9. WSQ Social Media Branding

The aim of this module is to enable learners to apply and integrate branding, marketing and public relations with social media. They will learn to create and evaluate their Facebook posting and marketing.

10. WSQ Integrated Digital Marketing Campaigns

The aim of this module is to enable learners to understand the pillars of digital marketing and create integrated marketing campaigns through social media, paid ads and SEO.

11. Café and Bakery Management

The aim of this module is to provide learners with an understanding of entrepreneurship in business, the skills and qualities needed by a successful entrepreneur and the roles an entrepreneur plays in starting and developing businesses. Learners will also learn the operations requirement of running a bakery and café business.

Duration:Part-time 6 months (Maximum candidature period is 12 months)
Class Frequency:Part-time, 2 to 3 days per week
Total Contact Hours:280 hours of classroom training
Attendance:Achieved minimum attendance of 75% to qualify for graduation.
Assessment Method:Students will be assessed by a variety of Assessment, practical assessment / written examination.
Graduation Criteria:Students who have successfully completed the course by passing every module will be awarded the Diploma in Entrepreneurship (Bakery & Café Operations) by the AceTek College

Matured candidate criteria: Candidates who do not meet the academic qualification criteria may be accepted based on the following conditions:

  • Age above 30 years of age.
  • Minimum of 8 years of relevant working experience
