For the crust: 330g Cake flour 120g powdered sugar 150g Butter (unsalted, cold and cut into small pieces) 1 Large egg | For the filling: 300g cream cheese, room temperature 70g Butter 70g castor sugar 2 large eggs, room temperature 40g heavy cream 1 tbsp lemon juice 20g Corn starch |
Instructions: In a large bowl, combine the flour, powdered sugar, and salt. Add the cold butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.Add the egg and mix until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.Preheat the oven to 180°C.On a lightly floured surface, roll out the dough to 1/8 inch thickness. Use a cookie cutter or a cup to cut out circles of dough and place them into a greased muffin tin or tartlet moulds.In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Add the heavy cream and lemon juice and mix until smooth.Pour the filling into the prepared crusts, filling them about 2/3 full.Bake the tarts for 10-15 minutes, or until the crust is golden brown and the filling is set.Remove the tarts from the oven and allow them to cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely. |
